Borscht
Ingredients
- 3 medium sized beets organic
- 2 small carrots organic
- 1 c chopped red cabbage
- 1 medium size onion
- 2 Tbsp miso or soup base
- 3 Tbsp apple cider vinegar
- 2 tsp tamari or 1 tsp salt
- sour cream
Directions
- Chop beets carrots and onion
- Cover with water in a saucepan and bring to a simmer
- Cook over medium heat for 15 minutes
- Add cabbage miso and apple cider vinegar
- Cook for 10 more minutes Add tamari or salt to taste
- Serve hot in bowls with a dollop of sour cream on top
