BorschtBeet Soup

Ingredients

  • 12 c chopped onion
  • 2 Tbsp butter
  • 1 10 12 oz can beef broth
  • 1 c water
  • 1 c beet juice
  • 1 Tbsp vinegar
  • 14 c ketchup
  • 1 c shredded cabbage
  • 1 can sliced beets
  • 1 tsp salt
  • 13 tsp pepper

Directions

  1. In a pan saute onions in butter
  2. Add to pan with all the other ingredients
  3. Cover and cook about 10 minutes or until cabbage is tender
  4. Serve with sour cream saltines
  5. Can be eaten without cream
  6. You can add more cabbage and beets to recipe
