Boudin Or Cajun Sausage
Ingredients
- 36 lb pork butts
- 6 lb fresh pork skin
- 8 or 10 lb pork liver
- 6 lb onions
- 1 c salt
- 12 c cayenne pepper
- 6 bundles green onions
- 6 Tbsp garlic powder
Directions
- Cut fresh pork butts into 1 12 pound pieces
- Boil all of the ingredients in 8 gallons of water
- When meat separates from bone strain meat from stock
- Reserve stock
- Grind meat mixture in a meat grinder or food processor
- Cook 36 cups of rice
- Combine mixture with cooled rice and add enough stock to make it moist
