Boudin Or Cajun Sausage

Ingredients

  • 36 lb pork butts
  • 6 lb fresh pork skin
  • 8 or 10 lb pork liver
  • 6 lb onions
  • 1 c salt
  • 12 c cayenne pepper
  • 6 bundles green onions
  • 6 Tbsp garlic powder

Directions

  1. Cut fresh pork butts into 1 12 pound pieces
  2. Boil all of the ingredients in 8 gallons of water
  3. When meat separates from bone strain meat from stock
  4. Reserve stock
  5. Grind meat mixture in a meat grinder or food processor
  6. Cook 36 cups of rice
  7. Combine mixture with cooled rice and add enough stock to make it moist
