Bourbon Pecan Chicken

Ingredients

• 14 c Dijon mustard
• 14 c dark brown sugar
• 2 Tbsp plus 2 tsp bourbon
• 2 Tbsp soy sauce
• 4 double breasts of chicken boned trimmed and split into 8 pieces
• 6 oz chilled unsalted butter cut into pieces
• 12 c sliced scallion tops
• 1 tsp Worcestershire sauce
• 12 c finely ground pecans
• 12 c dry bread crumbs
• 4 Tbsp butter

Directions

1. Whisk together mustard sugar bourbon soy sauce and Worcestershire sauce
2. Set aside
