Boursin Quiche

Boursin Quiche

Ingredients

  • pastry for 9-inch pie
  • 1 c grated Swiss cheese
  • 14 c chopped green onions
  • 14 c chopped ripe olives
  • 8 oz pkg fresh mushrooms
  • 1 small tomato peeled and chopped
  • 1 Tbsp flour
  • 3 eggs
  • 12 c half and half
  • 1 pkg Boursin cheese at room temperature

Directions

  1. Preheat oven to 375
  2. Line 9-inch pie tin with pastry
  3. In a small bowl mix Swiss green onions olives mushrooms and tomato Toss to combine
  4. Add flour and toss to coat
  5. Transfer cheese mixture to pastry
  6. In a small bowl combine eggs and half and half
  7. Beat with a fork to mix
  8. Add Boursin which has been crumbled and beat ingredients together with a whisk until well blended
  9. Bake quiche in preheated oven for 35 minutes or until golden and knife inserted comes out clean
  10. Let cool slightly before cutting
  11. Can also bake in 3-inch tart shells
