Boursin Quiche
Ingredients
- pastry for 9-inch pie
- 1 c grated Swiss cheese
- 14 c chopped green onions
- 14 c chopped ripe olives
- 8 oz pkg fresh mushrooms
- 1 small tomato peeled and chopped
- 1 Tbsp flour
- 3 eggs
- 12 c half and half
- 1 pkg Boursin cheese at room temperature
Directions
- Preheat oven to 375
- Line 9-inch pie tin with pastry
- In a small bowl mix Swiss green onions olives mushrooms and tomato Toss to combine
- Add flour and toss to coat
- Transfer cheese mixture to pastry
- In a small bowl combine eggs and half and half
- Beat with a fork to mix
- Add Boursin which has been crumbled and beat ingredients together with a whisk until well blended
- Bake quiche in preheated oven for 35 minutes or until golden and knife inserted comes out clean
- Let cool slightly before cutting
- Can also bake in 3-inch tart shells
