Brandied Peaches

Ingredients
- 4 lb peaches
- cloves
- 4 lb sugar
- 3 12 c water
- 1 egg white
- 1 pt white brandy
Directions
- Pare peaches
- Insert 2 cloves in each whole peach
- Make a syrup of the sugar and water
- Add egg white beaten to a froth Skim
- Add fruit 1 layer at a time and boil 5 minutes or until thickened
- Remove from heat
- Add brandy and pour over fruit in jars
- Seal at once in sterilized jars
- Makes 5 pints
