Brandied Peaches

Ingredients

  • 4 lb peaches
  • cloves
  • 4 lb sugar
  • 3 12 c water
  • 1 egg white
  • 1 pt white brandy

Directions

  1. Pare peaches
  2. Insert 2 cloves in each whole peach
  3. Make a syrup of the sugar and water
  4. Add egg white beaten to a froth Skim
  5. Add fruit 1 layer at a time and boil 5 minutes or until thickened
  6. Remove from heat
  7. Add brandy and pour over fruit in jars
  8. Seal at once in sterilized jars
  9. Makes 5 pints
