Brandied Sweet Potatoes
Ingredients
- 6 large unpared yams
- 2 tsp cornstarch
- 12 tsp nutmeg or cinnamon
- 2 tsp salt
- 12 c granulated sugar
- 1 c water
- 1 Tbsp lemon juice
- 13 c brandy
Directions
- One and one-fourth hours before serving cook yams in boiling salted water for 25 minutes or until tender
- Drain and cool
- In a 1-quart saucepan mix cornstarch nutmeg or cinnamon salt and granulated sugar
- Stir in water
- Cook over low heat until sauce is clear
- Stir in lemon juice and brandy
- Heat oven to 375 Peel potatoes slice crosswise 14 to 12-inch thick
- Put into buttered shallow baking dish
- Pour on sauce then bake 30 minutes or until glazed basting occasionally
- When glazed sprinkle with miniature marshmallows and broil until golden if desired
