Breakfast Burritos

Ingredients

  • 4 to 5 potatoes
  • 4 to 6 eggs
  • 1 can green chiles
  • 12 lb bacon
  • 1 small onion
  • grated Cheddar cheese
  • flour burrito shells
  • salsa optional

Directions

  1. Peel and slice potatoes
  2. Dice onion
  3. Fry together until tender
  4. Once cooked break potatoes in small pieces set aside Fry bacon and crumble into pieces
  5. Add to potatoes
  6. Scramble eggs add to potatoes
  7. Mix in green chiles
  8. Put mixture in warmed burrito shells with Cheddar cheese
  9. May be topped with salsa if desired
