Breakfast Burritos
Ingredients
- 4 to 5 potatoes
- 4 to 6 eggs
- 1 can green chiles
- 12 lb bacon
- 1 small onion
- grated Cheddar cheese
- flour burrito shells
- salsa optional
Directions
- Peel and slice potatoes
- Dice onion
- Fry together until tender
- Once cooked break potatoes in small pieces set aside Fry bacon and crumble into pieces
- Add to potatoes
- Scramble eggs add to potatoes
- Mix in green chiles
- Put mixture in warmed burrito shells with Cheddar cheese
- May be topped with salsa if desired
