Breakfast Corn Bread

Ingredients

  • 4 slices bacon
  • 2 c yellow cornmeal
  • 2 c boiling water
  • 3 Tbsp butter or margarine
  • 1 tsp salt
  • 2 eggs
  • 2 tsp baking powder
  • 2 12 c milk
  • 1 Tbsp sliced green onion

Directions

  1. Preheat oven to 425
  2. In a 10-inch cast-iron or heavy ovenproof skillet over medium heat fry bacon until crisp
  3. Drain on paper towels and crumble set aside
  4. Remove all but 1 tablespoon of bacon drippings from skillet
  5. Place skillet in oven to keep skillet hot
