Breakfast Muffins
Ingredients
- 1 c bran cereal crushed
- 23 c milk
- 1 34 c all-purpose flour
- 34 c chopped apple
- 12 c packed brown sugar
- 12 c carrots peeled and shredded
- 14 c granulated sugar
- 14 c flaked coconut
- 14 c vegetable oil
- 2 eggs
- 3 tsp baking powder
- 2 tsp ground cinnamon
- 1 tsp vanilla
- 12 tsp salt
Directions
- Heat oven to 375
- Grease 12 medium muffin cups or line with paper baking cups
- Mix cereal and milk in a larger bowl let stand 5 minutes until cereal is softened
- Stir in remaining ingredients
- Fill muffin cups almost full
- Bake 22 to 25 minutes until golden brown
- Immediately remove from oven
- Yields 1 dozen
