Breakfast Muffins

Ingredients

  • 1 c bran cereal crushed
  • 23 c milk
  • 1 34 c all-purpose flour
  • 34 c chopped apple
  • 12 c packed brown sugar
  • 12 c carrots peeled and shredded
  • 14 c granulated sugar
  • 14 c flaked coconut
  • 14 c vegetable oil
  • 2 eggs
  • 3 tsp baking powder
  • 2 tsp ground cinnamon
  • 1 tsp vanilla
  • 12 tsp salt

Directions

  1. Heat oven to 375
  2. Grease 12 medium muffin cups or line with paper baking cups
  3. Mix cereal and milk in a larger bowl let stand 5 minutes until cereal is softened
  4. Stir in remaining ingredients
  5. Fill muffin cups almost full
  6. Bake 22 to 25 minutes until golden brown
  7. Immediately remove from oven
  8. Yields 1 dozen
