Breakfast Sausage Patties

Ingredients

  • 1 lb pork shoulder cut into small cubes
  • 1 lb veal stew meat cut into small cubes
  • 23 c cracker meal
  • 1 egg
  • 2 tsp milk
  • 12 tsp salt or to taste
  • 1 tsp dried rosemary
  • 14 tsp ground allspice
  • 12 tsp dried sage
  • 14 tsp ground pepper
  • 14 tsp dried red pepper flakes
  • 14 c parsley leaves
  • 2 Tbsp butter or margarine
  • 2 Tbsp vegetable oil

Directions

  1. In food processor fitted with metal blade process pork and veal until very finely chopped
  2. Add cracker meal egg milk seasonings and parsley leaves process until well combined
  3. Shape into 2 12 to 3-inch patties
  4. In medium skillet heat butter or margarine and oil over moderately high heat
  5. Fry patties in batches without crowding until golden brown and all pink is gone about 3 to 4 minutes on each side
  6. Drain on paper towels
