Brennan Potatoes
Ingredients
- 2 large baking potatoes
- 4 strips bacon
- 14 c chopped green onion
- 2 Tbsp Parmesan cheese
- 12 c sour cream
- 12 tsp salt
- 12 tsp pepper
Directions
- Bake potato
- Grill bacon until crisp
- Drain leaving 3 tablespoons grease
- Add onion and saute slowly
- Remove from heat
- Cut shallow lengthwise strip from potatoes and scoop out inside and add to skillet
- Add cheese crumbled bacon sour cream and seasonings
- Mix and mash with spoon to blend
- Return to low heat and heat through
- Stuff into potatoes
- Drizzle with melted butter and sprinkle with paprika
- Bake at 350 for 15 minutes
