Broccoli-Cheese Potato Soup

Ingredients

  • 6 to 8 potatoes
  • 3 onions
  • 1 can Ro-Tel tomatoes and green chilies
  • 2 lb Velveeta cheese
  • 10 oz box chopped broccoli
  • salt
  • pepper
  • garlic salt

Directions

  1. Peel and cube potatoes add chopped onions
  2. Cover with water Cook together for 20 to 25 minutes
  3. Add Ro-Tel tomatoes cheese broccoli salt and pepper to taste
  4. Simmer over low heat until cheese melts
  5. Serve with Broccoli Cornbread
