Broccoli-Chicken Soup
Ingredients
- 1 lb boneless chicken
- 3 Tbsp butter
- 14 c chopped onion
- 14 c flour
- 1 tsp dry mustard
- 14 tsp salt
- 14 tsp dried thyme crushed
- 18 tsp pepper
- 1 34 c milk
- 1 14 12 oz can chicken broth
- 12 pkg or 2 c frozen mixed broccoli cauliflower and carrots
Directions
- Cook chicken and cube reserve liquid
- Set aside
- In a 3-quart saucepan melt butter add onion and cook until tender but not browned
- Stir in flour dry mustard salt thyme and pepper Stir in milk and chicken broth all at once
- Cook and stir over medium heat until slightly thickened and bubbly
- Stir in vegetables chicken and reserved liquid
- Cook and stir 4 to 6 minutes longer or until vegetables are tender and soup is heated through
