Broccoli And Cheddar Soup
Ingredients
- 1 12 lb chopped broccoli
- 2 c chicken broth or 2 c water plus 2 bouillon cubes
- 14 tsp nutmeg
- 1 tsp salt
- 2 c light cream
- 14 c chopped onion
- 3 Tbsp margarine
- 3 Tbsp cornstarch or flour
- 1 c grated Cheddar cheese
Directions
- In large saucepan cook broccoli until soft drain
- In small pan saute onion in margarine
- Add cornstarch and slowly add broth and cream
- Stir and cook until thickens
- Add salt nutmeg and broccoli
- Just before serving stir in cheese
