Broccoli Chowder
Ingredients
- 2 lb fresh broccoli
- 3 c chicken broth
- 3 c milk
- 1 c cooked chopped ham
- 2 tsp salt
- 14 tsp pepper
- 1 c half and half
- 2 c grated Swiss cheese
- 14 c butter
Directions
- Wash broccoli and remove any leaves on coarse stems
- Put broccoli in kettle and add half the stock or broth
- Bring to boil reduce heat and cover
- Simmer for 7 minutes or until tender
- Remove broccoli from stock with slotted spoon and chop coarsely
- Add remaining stock milk ham salt and pepper to the stock in kettle and stir well
- Bring to boil over medium heat stirring occasionally
- Stir in cream cheese butter and broccoli and heat until cheese is melted
- Do not boil
- Makes 8 servings
