Broiled Quail

Ingredients

  • 4 c barbecue sauce
  • 2 Tbsp oil
  • 1 bay leaf
  • garlic powder to taste
  • salt and pepper to taste
  • 1 tsp lemon and pepper seasoning
  • 16 quail breasts and legs

Directions

  1. Combine any commercial barbecue sauce or your own with oil bay leaf garlic and lemon and pepper seasoning
  2. Pour over cleaned quail and marinate at room temperature for about 1 hour before cooking
  3. Broil over charcoal turning once or twice until done about 20 minutes
  4. Do not overcook as this will dry out the tender white meat of the quail
  5. Serve barbecue sauce separately The legs make delicious hors doeuvres
