Brown Rice Salad
Ingredients
- 4 to 8 c cooked brown rice
- 1 large green and 1 large red pepper diced
- 1 yellow pepper diced can be added for more color
- 2 to 4 c grated carrot
- 12 to 1 c fresh parsley chopped
- 12 to 1 c currants or raisins
- 12 to 1 c sunflower seeds
- 12 to 1 c sliced almonds or any other kind of nut optional
- 12 c Bonita crystallized ginger chopped found on the Chinese shelf at Publix with luck or Nutrition Depot
Directions
- This is important it makes all the difference to the taste If you dont like ginger it doesnt matter but add gradually and taste
