Brunch Pie

Ingredients

  • 1 10 oz pkg frozen chopped broccoli or chopped spinach or 8 oz asparagus spears cooked and drained
  • 12 c Bisquick baking mix
  • 2 eggs
  • 1 tomato peeled and thinly sliced
  • 1 c sour cream
  • 1 c creamed cottage cheese
  • 14 c butter or margarine melted
  • 14 c grated Parmesan cheese

Directions

  1. Heat oven to 350
  2. Grease 9-inch pie plate
  3. Spread broccoli or spinach or asparagus in plate
  4. Beat sour cream cottage cheese baking mix margarine and eggs until smooth
  5. Pour into plate
  6. Top with tomatoes sprinkle with Parmesan cheese
  7. Bake until knife inserted between center and edge comes out clean about 30 minutes
  8. Cool 5 minutes
  9. Serves 6 to 8
