Bruschetta
Ingredients
- 1 34 lb fresh plum tomatoes about 12 - 14 tomatoes
- 2 Tbsp minced garlic
- 1 c coarsely chopped fresh basil
- 1 tsp balsamic vinegar
- 13 c olive oil
- salt coarsely ground pepper to taste
- 8 slices peasant bread
- 1 garlic clove cut in half
- 14 c olive oil
Directions
- Chop the tomatoes into 14 inch pieces
- Toss with 2 Tbsp garlic in a bowl
- Add the basil vinegar 13 c olive oil salt and pepper and mix well
- Let stand at room temperature for at least 15 minutes
- Rub bread with the cut side of the garlic halves and brush bread with 14 c olive oil
- Place on grill rack
- Grill for 5 to 8 minutes or until toasted
- Arrange the bread on a serving plate and top with the tomato mixture
- Serve immediately
