BudS Rum Cake

Ingredients

  • 1 yellow cake mix
  • 34 c brown or white raisins
  • 34 c chopped pecans or walnuts
  • 1 tsp vanilla
  • at least 2 c light or dark rum maybe a bit more if the cook is thirsty
  • 1 stick butter or margarine
  • 1 c sugar

Directions

  1. Grease and flour a Bundt pan
  2. Preheat oven to setting as directed on the cake mix box
  3. In a mixing bowl blend together cake mix nuts raisins and vanilla
  4. Substitute one-half the liquid required in the cake mix with rum
  5. Bake the cake according to package directions
  6. Set aside to cool
  7. When cool remove cake from Bundt pan and place on a plate
  8. At this time additional rum can be sprinkled on the cake for more flavor
  9. Prepare a glaze in a pot atop the stove consisting of the butter sugar and 12 cup rum
  10. Heat and stir until smooth
  11. Be careful as the rum may catch fire
  12. Spoon the glaze mixture over the cake
  13. The cake is best served chilled
