Butterfly Leg Of Lamb
Ingredients
- 4 to 6 lb leg of lamb
- 1 tsp oregano
- 1 tsp Beau Monde
- 12 tsp lemon peel
- 1 12 tsp garlic powder
- 1 tsp fine herbs
- 1 tsp Season-All
- 1 tsp chopped parsley
- 1 bay leaf broken
- 12 c olive oil
Directions
- Have the butcher butterfly the leg of lamb
- Rub the seasonings into the meat
- Then rub in olive oil
- Let the roast marinate 24 hours or at least overnight before broiling
- Place lamb 10 to 12-inches above hot coals
- Cook 45 minutes fat side up
- Turn and cook 10 more minutes
- Slice and serve
- Very good with wild rice and mushrooms and spinach casserole
