Butterfly Leg Of Lamb

Ingredients

  • 4 to 6 lb leg of lamb
  • 1 tsp oregano
  • 1 tsp Beau Monde
  • 12 tsp lemon peel
  • 1 12 tsp garlic powder
  • 1 tsp fine herbs
  • 1 tsp Season-All
  • 1 tsp chopped parsley
  • 1 bay leaf broken
  • 12 c olive oil

Directions

  1. Have the butcher butterfly the leg of lamb
  2. Rub the seasonings into the meat
  3. Then rub in olive oil
  4. Let the roast marinate 24 hours or at least overnight before broiling
  5. Place lamb 10 to 12-inches above hot coals
  6. Cook 45 minutes fat side up
  7. Turn and cook 10 more minutes
  8. Slice and serve
  9. Very good with wild rice and mushrooms and spinach casserole
