Buttermilk Bread

Ingredients

  • 5 to 6 c flour
  • 14 c sugar
  • 2 tsp salt
  • 12 tsp baking soda
  • 2 pkg active dry yeast
  • 1 12 c buttermilk
  • 12 c water
  • 12 c margarine
  • 1 Tbsp margarine melted

Directions

  1. Grease two 8 x 4-inch or 9 x 5-inch loaf pans
  2. Lightly spoon flour into measuring cup level off
  3. In large bowl combine 2 cups flour sugar salt baking soda and yeast blend well
  4. In small saucepan heat buttermilk water and 12 cup margarine until very warm 120 to 130
  5. Mixture will look curdled
  6. Add warm liquid to flour mixture
  7. Blend at low speed until moistened beat 3 minutes at medium speed
  8. Stir in an additional 2 12 to 3 cups flour until dough pulls cleanly away from sides of bowl
  9. On floured surface knead in 12 to 1 cup flour until dough is smooth and elastic about 10 minutes
  10. Place dough in greased bowl cover loosely with plastic wrap and cloth towel
  11. Let rise in warm place 80 to 85 until light and doubled in size 30 to 45 minutes
