Buttermilk Corn Bread

Ingredients

  • 1 c unbleached white flour
  • 1 c corn meal
  • 12 c sugar
  • 12 c cornstarch
  • 1 Tbsp baking powder
  • 1 tsp baking soda
  • 12 tsp salt
  • 1 egg
  • 14 c butter melted
  • 1 12 c buttermilk

Directions

  1. Combine flour corn meal sugar cornstarch baking powder baking soda and salt in large bowl
  2. Beat egg in smaller bowl and whisk in butter slowly until well mixed
  3. Whisk in buttermilk Pour egg mixture into dry ingredients mixing until just blended Gently spoon into greased 9 x 5-inch loaf pan
  4. Bake at 375 for 45 minutes or until wooden pick inserted in center of loaf comes out clean
  5. Makes 1 loaf
