Buttermilk Fudge
Ingredients
- 2 c sugar
- 1 c buttermilk
- 12 c butter or margarine
- 1 tsp baking soda
- 2 Tbsp light corn syrup
- butter or margarine
- 1 tsp vanilla extract
- 34 c chopped pecans
Directions
- Combine first 5 ingredients in a buttered Dutch oven
- Cook over medium heat stirring constantly until mixture reaches soft ball stage or candy thermometer registers 243 remove from heat Cool to 180
- Stir in vanilla
- Beat at high speed with an electric mixer until mixture thickens and begins to lose its gloss
- Stir in pecans
- Pour into a buttered 8-inch square pan or baking dish cool
