ByerlyS Wild Rice Soup

Ingredients
- 6 Tbsp butter
- 1 Tbsp minced onion
- 12 c flour
- 3 c chicken broth
- 2 c cooked wild rice
- 12 tsp salt
- 1 c half and half
- 2 Tbsp dry sherry optional
- 13 c minced ham
- 13 c finely shredded carrots
- 3 Tbsp chopped slivered almonds
- parsley garnish
Directions
- Melt butter in saucepan
- Saute onion until tender
- Blend in flour
- Gradually stir in broth
- Cook stirring constantly until mixture comes to a boil
- Boil and stir 1 minute
- Stir in rice salt ham carrots and almonds
- Simmer about 5 minutes
- Blend in half and half and sherry
- Heat to serving temperature
- Garnish with parsley
- Yield
