Caesar Salad With Sourdough Croutons
Ingredients
- 12 c fresh lemon juice
- 2 Tbsp Worcestershire sauce
- 4 garlic cloves coarsely chopped
- 12 tsp hot pepper sauce such as Tabasco sauce
- 1 c olive oil
- 2 large heads romaine lettuce torn into bite size pieces
- 1 red onion thinly sliced
- Sourdough Croutons
- 1 c freshly grated Parmesan cheese about 3 oz
Directions
- Blend first 4 ingredients in processor or blender With machine running gradually add oil in thin steady stream
- Season to taste with salt and pepper
- Prepare 1 day ahead
- Cover and chill Bring to room temperature before serving
- Combine lettuce onion and croutons in a large bowl Toss with enough dressing to season to taste
- Sprinkle with cheese and serve
- Makes 6 servings
