Cajun 15 Bean Soup

Ingredients

  • 1 pkg Cajun 15 bean soup
  • 1 large onion
  • 1 clove garlic minced
  • 1 to 2 lb regular or mild Italian sausage Polish sausage may also be used
  • 1 small can stewed tomatoes
  • juice of 1 lemon
  • contents of Cajun flavor package
  • 2 Tbsp salt

Directions

  1. In a large pan or kettle cover beans with water and add 2 tablespoons salt
  2. Soak overnight
  3. In the morning bring to boil and then drain
  4. Add 2-quarts water
  5. Bring to boil
  6. Simmer slowly 2 12 hours to 3 hours
  7. May be cooked in crock-pot
  8. In a skillet saute onion garlic and sausage until sausage is brown Drain off excess grease add contents to bean pot with stewed tomatoes lemon juice and flavor package
  9. Simmer for 10 minutes Serves 12 to 14
  10. Great as a leftover next day
  11. Also freezes very well
