Cajun Jambalaya
Ingredients
- 5 to 6 chicken thighs
- 1 12 lb Andouille sausage
- 4 c chopped onion
- 3 chopped bell peppers
- 1 chopped red or yellow pepper
- 1 Tbsp minced garlic
- 3 12 tsp salt
- 12 tsp pepper
- 14 tsp cayenne pepper
- 2 bay leaves
- 2 12 c white rice
- 12 c cubed smoked ham
- 3 12 c water or stock
Directions
- Brown sausage in large deep pot
- Remove and add chicken Cook chicken until done
- Remove
- Throw in vegetables and ham and cook until tender
- Add spices
- Add sausage and debone chicken Stir thoroughly
- Add water to cover
- Bring to boil turn down and cover
- Cook about 20 minutes until rice is done
- Stir occasionally to avoid sticking
- Serve with salad and garlic bread
