Cajun Jambalaya
Ingredients
- 1 3 lb fryer
- 1 lb smoked sausage or ham diced
- 2 c shrimp cleaned and deveined
- 2 Tbsp shortening
- 2 Tbsp flour
- 2 medium onions chopped
- 2 c peeled and diced tomatoes
- 12 bunch parsley chopped
- 2 c raw rice
- 1 large bell pepper chopped
- 1 clove garlic chopped
- 3 c water
- 1 12 tsp salt
- 13 bunch shallots chopped
- 12 tsp each thyme Tabasco and black pepper
Directions
- Cut chicken into serving pieces
- Season with salt and pepper Brown completely in melted shortening
- Remove from pot and make a roux with drippings and flour
- Add sausage or ham which has been preboiled and drained
- Then add cooked chicken onions bell pepper tomatoes garlic and shrimp
- Cook stirring constantly for 10 minutes
