Cajun Jambalaya

Ingredients

  • 5 to 6 chicken thighs
  • 1 12 lb Andouille sausage
  • 4 c chopped onion
  • 3 chopped bell peppers
  • 1 chopped red or yellow pepper
  • 1 Tbsp minced garlic
  • 3 12 tsp salt
  • 12 tsp pepper
  • 14 tsp cayenne pepper
  • 2 bay leaves
  • 2 12 c white rice
  • 12 c cubed smoked ham
  • 3 12 c water or stock

Directions

  1. Brown sausage in large deep pot
  2. Remove and add chicken Cook chicken until done
  3. Remove
  4. Throw in vegetables and ham and cook until tender
  5. Add spices
  6. Add sausage and debone chicken Stir thoroughly
  7. Add water to cover
  8. Bring to boil turn down and cover
  9. Cook about 20 minutes until rice is done
  10. Stir occasionally to avoid sticking
  11. Serve with salad and garlic bread
