Cajun Jambalaya

Ingredients

  • 1 3 lb fryer
  • 1 lb smoked sausage or ham diced
  • 2 c shrimp cleaned and deveined
  • 2 Tbsp shortening
  • 2 Tbsp flour
  • 2 medium onions chopped
  • 2 c peeled and diced tomatoes
  • 12 bunch parsley chopped
  • 2 c raw rice
  • 1 large bell pepper chopped
  • 1 clove garlic chopped
  • 3 c water
  • 1 12 tsp salt
  • 13 bunch shallots chopped
  • 12 tsp each thyme Tabasco and black pepper

Directions

  1. Cut chicken into serving pieces
  2. Season with salt and pepper Brown completely in melted shortening
  3. Remove from pot and make a roux with drippings and flour
  4. Add sausage or ham which has been preboiled and drained
  5. Then add cooked chicken onions bell pepper tomatoes garlic and shrimp
  6. Cook stirring constantly for 10 minutes
