California Rice And Chilies
Ingredients
- 4 c cooked rice not instant
- 14 c butter
- 1 c chopped onion
- 2 c sour cream
- 12 to 1 4 oz jar chopped green chilies these may be hot so use accordingly
- 12 tsp salt
- 18 tsp pepper
- 1 c cottage cheese
- 2 c grated Cheddar cheese
Directions
- Cook rice
- Brown onion in butter until transparent
- Add cooked rice sour cream green chilies salt and pepper
- Grease a large 2 12-quart casserole or baking dish and layer one-half of rice mixture 12 cottage cheese 12 Cheddar cheese
- Repeat layers
- Bake at 375 for 30 to 40 minutes
- Can be made ahead and frozen
