California Rice And Chilies

Ingredients

  • 4 c cooked rice not instant
  • 14 c butter
  • 1 c chopped onion
  • 2 c sour cream
  • 12 to 1 4 oz jar chopped green chilies these may be hot so use accordingly
  • 12 tsp salt
  • 18 tsp pepper
  • 1 c cottage cheese
  • 2 c grated Cheddar cheese

Directions

  1. Cook rice
  2. Brown onion in butter until transparent
  3. Add cooked rice sour cream green chilies salt and pepper
  4. Grease a large 2 12-quart casserole or baking dish and layer one-half of rice mixture 12 cottage cheese 12 Cheddar cheese
  5. Repeat layers
  6. Bake at 375 for 30 to 40 minutes
  7. Can be made ahead and frozen
