Camarones EnchiladasServing Size 8
Ingredients
- 2 lb peeled and washed shrimp
- 1 large chopped onion
- 6 cloves crushed garlic
- 1 large chopped green pepper
- 14 c each chopped cilantro and parsley
- 1 8 oz can tomato sauce
- 1 tsp Worcestershire
- 1 7 oz jar chopped red pimento
- 12 tsp Tabasco
- 12 c ketchup
- 12 c dry white wine
- 12 Tbsp vinegar
- 3 bay leaves
- 1 12 tsp salt
- 12 tsp black pepper
Directions
- Saute shrimp in a little oil until rosey
- Set aside
- Saute onion garlic and green pepper
- Add remaining ingredients and simmer 25 minutes
- Add shrimp and simmer another 5 minutes Serve over rice
