Candied Sweet Potatoes With Apricots
Ingredients
- 2 pounds cooked sweet potatoes whole
- 1 can drained cooked apricots - reserve liquid
- 1 cup brown sugar
- 14 cup melted butter or margarine
- 1 tsp grated orange rind
- 14 cup chopped walnuts
Directions
- Heat oven to 375 degrees
- Cut sweet potatoes into thick slices
- Arrange 1 layer in 10x6x2 greased baking dish
- Cover with layer of apricots sprinkled with some brown sugar
- Repeat layers
- Combine butter
- reserved apricot liquid and orange rind Pour over layers
- Bake uncovered 45 minutes - basting once or twice with liquid from bottom of dish
- Top with nuts during last 5 minutes
