CanjicaCorn Pudding

CanjicaCorn Pudding

Ingredients

  • 1 1 lb pkg white corn dried
  • 12 c sugar
  • 1 bottle coconut milk
  • 2 c milk
  • cinnamon

Directions

  1. Cook the corn as you would dried beans or peas until tender 20 minutes in the pressure cooker is one way
  2. Dont use a lot of water
  3. After the corn is done add other ingredients
  4. You may need more milk coconut and sugar depending on how the corn comes out
  5. Before serving sprinkle with cinnamon
  6. The texture should be creamy but lumpy and not too thick
  7. Serve warm
