CanjicaCorn Pudding
Ingredients
- 1 1 lb pkg white corn dried
- 12 c sugar
- 1 bottle coconut milk
- 2 c milk
- cinnamon
Directions
- Cook the corn as you would dried beans or peas until tender 20 minutes in the pressure cooker is one way
- Dont use a lot of water
- After the corn is done add other ingredients
- You may need more milk coconut and sugar depending on how the corn comes out
- Before serving sprinkle with cinnamon
- The texture should be creamy but lumpy and not too thick
- Serve warm
