Ingredients

  • 13 c olive oil
  • 12 green pepper cubed
  • 1 medium onion chopped
  • 1 medium peeled eggplant cubed
  • 3 to 4 large cloves garlic chopped
  • 6 oz tomato paste
  • 2 Tbsp wine vinegar
  • 12 c sliced stuffed olives
  • 1 12 tsp sugar
  • 12 tsp oregano
  • 1 tsp salt
  • dash of pepper
  • 1 4 oz can mushrooms drained or fresh

Directions

  1. Saute in oil the cubed pepper chopped onion cubed peeled eggplant and chopped garlic for 10 to 15 minutes
  2. Mix together tomato paste vinegar olives seasonings and mushrooms combine with sauteed mixture
  3. Cover simmer for 20 to 30 minutes stir occasionally
