Caponata
Ingredients
- 13 c olive oil
- 12 green pepper cubed
- 1 medium onion chopped
- 1 medium peeled eggplant cubed
- 3 to 4 large cloves garlic chopped
- 6 oz tomato paste
- 2 Tbsp wine vinegar
- 12 c sliced stuffed olives
- 1 12 tsp sugar
- 12 tsp oregano
- 1 tsp salt
- dash of pepper
- 1 4 oz can mushrooms drained or fresh
Directions
- Saute in oil the cubed pepper chopped onion cubed peeled eggplant and chopped garlic for 10 to 15 minutes
- Mix together tomato paste vinegar olives seasonings and mushrooms combine with sauteed mixture
- Cover simmer for 20 to 30 minutes stir occasionally
