Caramelized Onion Pot RoastMakes 12 Servings

Ingredients

  • 4 lb beef boneless chuck roast
  • 1 Tbsp olive or vegetable oil
  • 1 tsp salt
  • 12 tsp pepper
  • 6 medium onions sliced
  • 1 12 c beef broth
  • 34 c beer
  • 2 Tbsp packed brown sugar
  • 3 Tbsp Dijon mustard
  • 2 Tbsp cider vinegar

Directions

  1. Trim excess fat from beef
  2. Heat oil in 10-inch skillet over medium-high heat
  3. Cook beef in oil about 10 minutes turning occasionally until brown on all sides
  4. Sprinkle with salt and pepper
  5. Place onions in 3 12 to 6-quart slow cooker
  6. Place beef on onions
  7. Mix remaining ingredients pour over beef and onions Cover and cook on low heat setting 8 to 10 hours or until beef is tender
  8. Remove beef and onions from cooker using slotted spoon Cut beef into slices
  9. Skim fat from beef juices in cooker if desired
  10. Serve beef with juices
