Caribbean Fudge Pie

Ingredients

  • 14 c margarine or butter softened
  • 34 c firmly packed brown sugar
  • 3 eggs
  • 1 8 oz pkg semi-sweet chocolate melted
  • 1 tsp rum extract
  • 2 tsp instant coffee
  • 14 c all-purpose flour
  • 1 c chopped walnuts
  • 12 c halves or large pieces of walnuts
  • 1 9-inch unbaked pie shell

Directions

  1. Heat oven to 375
  2. Beat margarine and sugar in a large bowl until light and fluffy
  3. Add eggs one at a time beating well after each addition
  4. Add chocolate instant coffee and rum extract mix well
  5. Stir in flour and 1 cup chopped walnuts pour into baked pie shell
  6. Decorate top with 12 cup walnut halves or pieces
  7. Bake in lower third of oven for 25 minutes
  8. Cool on wire rack
  9. Refrigerate for at least 1 hour before serving
  10. Store in refrigerator
