Carolina Christmas Cake

Ingredients

• 1 12 c applesauce
• 2 c sugar
• 2 12 c sifted plain flour
• 12 tsp each cinnamon cloves and allspice
• 1 c raisins
• 1 c walnuts
• 12 c boiling water
• 14 to 12 c candied fruit
• 1 egg
• 1 c shortening
• 2 12 tsp soda
• 14 tsp salt
• candied pineapple rings cherries and pecan halves to decorate top

Directions

1. Cream shortening
2. Add sugar gradually
3. Add well beaten egg and applesauce Use a little of the flour to dredge fruit and nuts
4. Sift remaining flour mixture alternately with the water to the creamed mixture
5. Add flour raisins and nuts
