Carolina Christmas Cake
Ingredients
- 1 12 c applesauce
- 2 c sugar
- 2 12 c sifted plain flour
- 12 tsp each cinnamon cloves and allspice
- 1 c raisins
- 1 c walnuts
- 12 c boiling water
- 14 to 12 c candied fruit
- 1 egg
- 1 c shortening
- 2 12 tsp soda
- 14 tsp salt
- candied pineapple rings cherries and pecan halves to decorate top
Directions
- Cream shortening
- Add sugar gradually
- Add well beaten egg and applesauce Use a little of the flour to dredge fruit and nuts
- Sift remaining flour mixture alternately with the water to the creamed mixture
- Add flour raisins and nuts
