CarolS Coconut-Pecan Ice Cream Pie

Ingredients

  • 1 c vanilla wafer crumbs
  • 12 c shredded coconut
  • 14 c butter melted
  • 14 c sugar
  • 3 egg whites
  • 18 tsp salt
  • 2 pt vanilla ice cream softened
  • 1 c pecan halves broken
  • 18 tsp cream of tartar

Directions

  1. In a 9-inch pie pan mix first 4 ingredients
  2. With back of spoon press mixture to bottom and sides of pan
  3. Place in freezer until firm about 10 minutes
  4. In large bowl mix ice cream and pecans
  5. Smooth into crust
  6. Cover and freeze until firm for at least 4 hours
  7. Twenty minutes before serving preheat oven to 500
