CarolS French Fried Shrimp

Ingredients

  • 1 c sifted all-purpose flour
  • 12 tsp sugar
  • 1 c ice water
  • 2 lb fresh shrimp
  • 12 tsp salt
  • 1 slightly beaten egg
  • 2 Tbsp salad oil

Directions

  1. Combine ingredients except shrimp beat
  2. Peel shell from shrimp leaving last section and tail intact optional Butterfly shrimp by cutting almost through at center of back without severing ends
  3. Remove black vein
  4. Dry shrimp thoroughly between paper towels
  5. Dip into batter
  6. Fry in deep hot fat 375 until golden brown
  7. Drain on paper towels
  8. Serve immediately with lemon wedges and cocktail sauce or ketchup
