Carrot-Molasses Muffins
Ingredients
- 1 slightly beaten egg
- 1 cup whole bran cereal
- 2 medium carrots shredded
- 12 cup plain yogurt
- 12 cup tomato juice
- 12 cup molasses
- 14 cup cooking oil
- 1 cup whole wheat flour
- 12 cup all-purpose flour
- 1 12 teaspoon baking soda
Directions
- In a medium mixing bowl stir together egg cereal carrots yogurt tomato juice molasses and oil
- Let stand for 5 min
- In a medium mixing bowl combine flours baking soda and 12 teaspoon salt make a well in the center
- Add molasses mixture all at once to dry ingredients stirring just till moistened
