Carrot Bran Muffins

Ingredients

  • 1 c bran flakes
  • 2 c shredded carrots
  • 2 Tbsp brown sugar
  • 1 Tbsp lemon juice
  • 12 tsp baking soda
  • 1 egg slightly beaten
  • 34 c skim milk
  • 1 c whole wheat flour
  • 2 Tbsp vegetable oil
  • 1 tsp baking powder
  • 14 to 12 tsp cinnamon

Directions

  1. Combine bran flakes milk and carrots let stand 5 minutes Add remaining ingredients stirring until particles are moistened Line each muffin tin with two paper liners fill half full
  2. Bake in 400 oven for 20 minutes
