Carrot Bran Muffins

Ingredients
- 1 c bran flakes
- 2 c shredded carrots
- 2 Tbsp brown sugar
- 1 Tbsp lemon juice
- 12 tsp baking soda
- 1 egg slightly beaten
- 34 c skim milk
- 1 c whole wheat flour
- 2 Tbsp vegetable oil
- 1 tsp baking powder
- 14 to 12 tsp cinnamon
Directions
- Combine bran flakes milk and carrots let stand 5 minutes Add remaining ingredients stirring until particles are moistened Line each muffin tin with two paper liners fill half full
- Bake in 400 oven for 20 minutes
