Carrot Bread

Ingredients

  • 1 12 c flour
  • 1 tsp baking soda
  • 1 12 tsp cinnamon
  • 12 tsp salt
  • 2 eggs
  • 1 c sugar
  • 12 c oil
  • 1 c mashed carrots
  • 12 c chopped nuts

Directions

  1. Sift together flour soda cinnamon and salt set aside
  2. Beat eggs and beat in sugar oil and carrots
  3. Gradually beat in flour mixture
  4. Stir in nuts
  5. Pour into greased 9 x 5-inch loaf pan and bake in preheated 350 oven for 55 to 60 minutes
  6. Cool 10 minutes in pan then turn onto a rack to cool
