Carrot Cake

Ingredients

  • 2 c flour
  • 2 tsp baking powder
  • 1 12 tsp salt
  • 2 tsp cinnamon
  • 2 c sugar
  • 1 12 c salad oil
  • 4 eggs
  • 2 c carrots finely grated
  • 1 can crushed pineapple drained well
  • 1 12 c coconut

Directions

  1. Mix oil eggs and sugar
  2. Add dry ingredients
  3. Blend in carrots pineapple and coconut
  4. Bake at 350
  5. until done
  6. Do not overbake
  7. Makes one 9 x 13-inch or 3 9-inch round layers
  8. Ice with cream cheese frosting
