Carrot Cake Bundt Style

Ingredients

  • 1 14 c oil
  • 3 c sugar
  • 12 tsp salt
  • 2 tsp baking powder
  • 1 c chopped walnuts
  • 1 can cream cheese frosting
  • 3 c flour
  • 2 tsp cinnamon
  • 3 c grated carrots
  • 4 eggs well beaten
  • 2 tsp baking soda

Directions

  1. Preheat oven to 350
  2. Sift all dry ingredients together 4 times
  3. Add eggs and oil and mix well 2 minutes
  4. Add carrots and mix 2 minutes more
  5. Fold in chopped walnuts
  6. Pour into ungreased Bundt pan
  7. Bake 1 hour and 20 minutes
  8. Cool completely
  9. Turn out onto plate and frost
  10. For storage keep tightly covered
  11. May freeze to preserve up to 30 days
