Carrot Cookies
Ingredients
- 12 c boiling water
- 12 c raisins
- 34 to 1 c brown sugar
- 12 c shortening
- 1 egg unbeaten
- 1 tsp lemon extract
- 12 c finely shredded raw carrots
- 1 12 c sifted all-purpose flour
- 2 tsp baking powder
- 12 tsp salt
Directions
- Pour boiling water over raisins and soak 5 minutes drain Combine sugar shortening egg and lemon extract in mixing bowl beat well
- Stir in carrots and drained raisins
- Sift together flour baking powder and salt add to first mixture and blend well Drop by teaspoonfuls onto greased baking sheet
- Bake at 375 for 10 to 12 minutes
- Makes 3 dozen
