Carrot Kugel
Ingredients
- 4 eggs separated
- 12 c sugar
- 1 c grated raw carrots tightly packed
- 14 c shredded apple
- 14 c red wine
- 2 Tbsp lemon juice
- 12 tsp grated lemon peel
- 13 c potato flour
Directions
- Preheat oven to 375
- Beat the egg yolks with sugar until light
- Add the grated carrot shredded apple wine lemon juice lemon peel and potato flour
- Blend well
- Beat the egg whites until stiff peaks form and fold them into the carrot mixture Spoon into a well-greased 1 12 quart casserole
- Bake 35 minutes or until golden brown
