Carrot Loaf

Ingredients

  • 4 eggs separated
  • 3 c shredded carrots
  • 1 c heavy cream
  • 34 c shredded Cheddar cheese
  • 1 c cracker crumbs
  • 2 Tbsp melted butter
  • 1 small finely chopped onion
  • 14 tsp basil
  • 34 tsp salt
  • 14 tsp pepper

Directions

  1. Place egg whites in bowl
  2. Attach bowl and wire whip
  3. Turn to speed 8 and whip until stiff but not dry
  4. Remove from bowl and set aside
  5. Place egg yolks on speed 4 for 2 minutes until thick and lemon colored
  6. Add remaining ingredients and mix on speed 2 until combined 30 seconds
  7. Place mixture in 8 12 x 4 12 x 2 14-inch greased loaf pan
  8. Bake at 350 for 40 to 45 minutes Cool in pan for 10 minutes then remove and serve warm
  9. Yields 10 to 12 servings
