Carrot SandwichesAppetizer

Ingredients

• 2 8 oz pkg cream cheese
• 4 small carrots grated finely
• 12 c chopped pecans
• 1 Tbsp onion juice
• salt and pepper to taste
• mayonnaise
• brown bread

Directions

1. In mixer cream the cheese and add grated carrots onion juice salt pepper and enough mayonnaise to moisten
2. Add pecans Trim bread
3. Spread filling and roll like jelly roll
4. We rolled our bread prior to spreading filling Chill or freeze before slicing into 12-inch slices
5. Freezes well
