Carrot Spice Cake

Ingredients

  • 4 eggs
  • 2 c sugar
  • 2 c finely shredded carrots
  • 1 12 c salad oil
  • 1 c finely chopped nuts
  • 3 c flour
  • 12 tsp salt
  • 2 tsp cinnamon
  • 2 tsp soda
  • 3 tsp baking powder

Directions

  1. Beat eggs slightly add sugar carrots oil and nuts
  2. Mix well
  3. Mix dry ingredients
  4. Add dry ingredients gradually to carrot mixture and beat until smooth
  5. Turn into ungreased 10-inch tube pan and bake in moderate oven at 350 for 1 hour and 15 minutes or until cake springs back when touched lightly
  6. Cool 10 minutes
  7. Turn out of pan
  8. Cool thoroughly
  9. This cake is like a steamed carrot pudding
  10. May be iced with cream cheese frosting but excellent without the frosting
  11. We have it every year for Thanksgiving
