Carrot Spice Cake
Ingredients
- 4 eggs
- 2 c sugar
- 2 c finely shredded carrots
- 1 12 c salad oil
- 1 c finely chopped nuts
- 3 c flour
- 12 tsp salt
- 2 tsp cinnamon
- 2 tsp soda
- 3 tsp baking powder
Directions
- Beat eggs slightly add sugar carrots oil and nuts
- Mix well
- Mix dry ingredients
- Add dry ingredients gradually to carrot mixture and beat until smooth
- Turn into ungreased 10-inch tube pan and bake in moderate oven at 350 for 1 hour and 15 minutes or until cake springs back when touched lightly
- Cool 10 minutes
- Turn out of pan
- Cool thoroughly
- This cake is like a steamed carrot pudding
- May be iced with cream cheese frosting but excellent without the frosting
- We have it every year for Thanksgiving
