Carrots Of The Ritz

Ingredients
- 3 c pared and sliced carrots
- 1 chicken bouillon cube
- 12 buttery round crackers crushed Ritz-type
- 2 Tbsp minced onion
- 2 Tbsp softened butter
- grated Cheddar cheese
Directions
- Cook carrots in water with bouillon cube until almost done Drain and save liquid
- Coarsely mash carrots Add crushed crackers onion butter and 23 cup reserved liquid
- Mix well Place in a small buttered baking dish
- Cover with grated cheese Bake at 450 for 15 to 20 minutes
- Serves 6 to 8
