Carrots Of The Ritz

Ingredients

  • 3 c pared and sliced carrots
  • 1 chicken bouillon cube
  • 12 buttery round crackers crushed Ritz-type
  • 2 Tbsp minced onion
  • 2 Tbsp softened butter
  • grated Cheddar cheese

Directions

  1. Cook carrots in water with bouillon cube until almost done Drain and save liquid
  2. Coarsely mash carrots Add crushed crackers onion butter and 23 cup reserved liquid
  3. Mix well Place in a small buttered baking dish
  4. Cover with grated cheese Bake at 450 for 15 to 20 minutes
  5. Serves 6 to 8
